Coconut Cream Cheese Frosting

This frosting is heavenly. Easy. Delicate. Just sweet enough.


1 stick butter (8 tbsp)

8 oz. cream cheese

1 cup Powdered Sugar

1 cup sweetened coconut flakes

To Do: To an electric mixer add the butter and cream cheese, beat on medium high for about 8 minutes until well mixed and it begins to be fluffy. Add Powdered Sugar and mix well. Add coconut flakes and mix until coconut is adequately smothered in frosting.

Use this frosting on Pineapple Cakes, Carrot Cakes, Nut Cakes, Spice Cakes, Pumpkin Cakes or use as a filling in Pumpkin Rolls or Whoopie Pies. Or eat it with a spoon.
