French Toast Baked Oatmeal

Basically four things happened this Christmas break…1. We ate a lot of food. 2. My kitchen became a showcase for The Pioneer Woman’s kitchen collection. 3. My parents did dishes and 4. I took an opportunity to read, cook, sleep and sleep.

I don’t hate any of those.

Some friends gave me a PW Dutch Oven and family gave me measuring cups, bakeware, pie plates and a ginormous frying pan. Add to the other things I already had=Pioneer Woman Showcase. I had used all of the dishes except the bakeware so last night I brainstormed how to use at least one of them today and came up with this French Toast Baked Oatmeal.

We ate it for lunch today and it earned a resounding Yum.

Except from the girls who don’t eat oatmeal because “Ew, mom. it’s gross.”

The rest of us thought it was really good (my rents, husband and self). It really does taste like French toast without bread. I used the smaller PW baking dish for this recipe, but you could use a 9×9 or 8×8 pan as well.

Ingredients: 

1 cup Bob’s Red Mill Scottish Oatmeal

1.5 cups whole milk

4 tbsp melted butter

pinch of Nutmeg

1 heaping tsp. Cinnamon

1.5 cups real maple syrup

dash of vanilla

To Do: Mix all ingredients and add to a greased baking dish. Bake at 350 F uncovered for 45-60 minutes.

Serve warm.

Optional: Add 1/2 cup of any of the following: raisins, dried cranberries, nuts, dried or fresh apples.
