Whoopie Pie Cake

To cap off our dinner of pot roast, mashed potatoes, gravy, baked carrots, brocolli and homemade applesauce on this too-much-like-a-fall-day-in-New-England-but-it’s-June-in-Pennsylvania day I made a chocolate Whoopie Pie Cake to celebrate the end of the school year and the fact that Anna is done with elementary school and moving into High School.

Not.

Prepared.

For.

This.

My.

Baby.

Is.

Growing.

Up.

We wanted to have some good chocolate cake (one of her faves) and let her know we’re proud of her.

Basically…a Whoopie Pie Cake is one chocolate cake mix made to package instructions, baked in two round cake pans, cooled with frosting slathered in between the layers.

Kick it up a notch by throwing a big ole’ handful of chocolate chips in the batter before baking.

I know it’s edgy.

We served it with Chocolate Peanut Butter Ice Cream.
