Granola is a great snack by itself, but also great on top of yogurt or ice cream. Store bought is good, but homemade is better and less expensive. It’s quick to make (you likely have everything in your cupboard right now that you’ll need)…simply put everything in a bowl and mix, then while you’re baking it get some other things done. Like write a blog post on how many other things you can get done while the granola is baking. Also, I’m working on marketing stuff for Choosing Joy. Dinner prep will start soon too, so that there’s that.
3 cups old fashioned oatmeal (don’t use quick oats)
1 cup unsweetened shredded coconut
1/4 cup pure maple syrup
4 tbsp softened butter
1/2-1 cup brown sugar
pinch of cinnamon, optional
- Put all ingredients in a bowl and mix very well. Make sure the butter is creamed throughout and there are no clumps of it left.
- Bake at 250 degrees F until golden brown. Stir frequently to maximize baking on all sides.
- When baked let cool completely before adding in optional ingredients.
- Store in an airtight container.
Additional Ingredients, optional: Craisins, raisins, nuts, chocolate chips, dried fruit, white chocolate, pretzel bites, MandM’s (for a quick pickme up on a hike)
