Just like my Risotto Stuffed Mushrooms I posted yesterday this Kale and Smoked Cheese Duck Egg Bake came together because of needing to use up some things in the refrigerator. We had a movie night here at the house with our church and this is what my dish was to share. Despite beggings from my kids and their friends for English Muffin Pizzas…I couldn’t leave the house with 7 kids in it (5 of whom weren’t mine) and head to the grocery store. So they got the next best thing. Duck Eggs and Kale. Right? Right said no kid ever.
Local friends have ducks and those ducks have decided to start laying eggs. Check out the pic below….the duck egg is on the left. Gorgeous. I have found duck eggs to make baked items fluffier. I think their taste is richer than a chicken egg.
Okay…onto the recipe.
12 Duck eggs (or 24 chicken eggs)
2/3 cup shredded Smoked Cheddar
2-3 cups milk or cream…depends on the consistency you want
3 tbsp melted butter
Salt, pepper and garlic powder to taste
two handfuls of fresh or frozen Kale cut into bite sized pieces.
- Put everything but the Kale in a mixer or in a bowl and whisk together.
- Pour into a greased 9×13 baking pan.
- Add Kale pieces and give it a good stir.
- Bake at 375 for about 30 minutes, or until fork comes out clean from center.
Change ups…..just like most of my recipes this is simple and ingredients can be changed at will. Add more cheese, or switch the kale to spinach or peppers and onions….use different cheese, or add less milk or cream. Bake them in individual pans or two small ones. Seriously…food doesn’t have to be difficult to be good.
