3 Ingredient Carrot Raisin Salad-Recipe

My mom makes this frequently and did when I was a kid too. It’s something I’ve always loved. Most of my bloggie and real life food is simple, with simple ingredients and easily maneuvered to add or subtract ingredients at will. This is no different. I’ve had this salad with yogurt as a dressing instead of mayo and I’ve had it with crushed pineapple too. You could add dried cranberries, a bit of lemon zest or slivered almonds to fancy it up a little bit. But I like it plan and simple.

It’s carrots. It’s raisins. It’s mayo. It’s salad. It’s yummy.

Ingredients:

1 1/4 cup shredded or finely diced peeled carrots (use a food processor, food chopper or a good old fashioned knife)

3/4 cup raisins

1/4 cup mayonnaise

To do: 

1.Put everything in a bowl.

2.Mix it up.

Keep it chilled until you eat it. The flavor gets better after awhile.
