I discovered this recipe a few years ago via The Pioneer Woman I think. Did it originate with her? I’m not sure, but we like it and eat it frequently. Even my kids liked it when they were younger. Probably more than me.
2 cups baby carrots OR 1 whole carrot per person, pealed (leave the stem on)
1 tbsp olive oil
2 tbsp thyme
- If using baby carrots simply place them in the bottom of a baking dish.
If using whole carrots peal and leave stem on. Place in baking dish.
2. Drizzle olive oil over all carrots.
3. Sprinkle thyme all over carrots.
4. Cover with foil and bake at 400 degrees F for 20-30 minutes until fork tender.
