Some years ago we had a version of this dip at an anniversary party. It was divine. We’ve continued making it over the years. Kaitlyn made some this weekend for a party and then made a second batch for us for lunch yesterday.
1 can refried beans
shredded cheddar cheese
Optional Ingredients: shredded lettuce, jalepenos, guacamole
Step 1. Using a platter or flat bottomed casserole dish (this is best for travelling) spread refried beans.
Step 2: Spread sour cream all over the beans. You can cover the entire amount of beans or just half.
Step 3. Spread salsa over the beans and sour cream.
Step 4: Add black olives and shredded cheese.
This can be made ahead and refrigerated or eaten right away.
Optional: Kaitlyn made hers with half sour cream and half salsa. Add lettuce to the top for some extra goodness. Add meat or guacamole if you like. Leave off the black olives if you hate them…add some hot peppers…the list of options is endless.
Serve with tortilla chips for an easy snack or lunch. Yumma.
