Homemade Potato Chips in Olive Oil-How To

  1. One medium to large potato per person. DSC_0978
  2. Cut potatoes very thin.DSC_0981

DSC_09833. Grab the Olive Oil
DSC_09724. Fill a kettle half way with Olive Oil. Turn burner on medium high. The oil should be very hot. DSC_09755. Grab two handfuls of potatoes and put them in the kettle. DSC_0004-0016. The oil will look like this:DSC_0005-0017. Next, cover a plate with a layer of paper towels. DSC_09868. Give the chips a stir. This part of the process will take 10ish minutes. 
DSC_09969. When the chips start to have a golden brown edging to them, they are done. However, depending on how crispy/burnt you like the chips you can leave them in as long as you like.

10. Using a slotted spoon take the chips out of the kettle….

11. …and place on the paper towel to soak some of the oil off. Salt with your fave salt.
